A traditional Sicilian dessert from the Spanish domination period, typically enjoyed during Carnival. A simple white pudding made with milk, orange zest, cinnamon, and sugar, then chilled, cut into squares, breaded, and fried until golden.

Ingredients
9 items- 800 mlWhole Milk
- 110 gCorn Starch
- SugarTo taste
- Orange ZestZest of 1 orange
- Cinnamon1 cinnamon stick or a pinch of ground cinnamon
- FlourFor breading
- Egg2–3 eggs, beaten
- BreadcrumbsFor breading
- Seed Oil For FryingFor frying
Method
- Put the milk in a saucepan with the orange zest and cinnamon. Let it infuse for 20 minutes.
- Mix the cornstarch with a little cold milk to make a slurry.
- Remove the aromatics from the milk and add the cornstarch slurry. Cook, stirring, until thickened (about 5 minutes).
- Pour the pudding into an oiled baking dish. Let it cool, then refrigerate for 3 hours.
- Cut the pudding into squares.
- Bread them: first flour, then beaten egg, then breadcrumbs.
- Fry in hot oil until golden.
