A traditional Ugandan pancake made from ripe bananas and cassava flour, deep-fried to a golden brown. Soft and springy inside with crispy edges, it's naturally sweet from the bananas.

4 items- BananasRipe, small, and sweet
- Baking SodaAlso called bicarbonate of soda
- Cassava FlourFor binding and texture
- OilFor deep frying
Method
- Peel the bananas and place them in a bowl.
- Mash the bananas until they are smooth and goopy.
- Add baking soda (bicarbonate of soda) and mix well.
- Add cassava flour and mix with your hands until a dough forms.
- Roll the dough out flat on a surface.
- Use a cup or round cutter to press out pancake shapes.
- Heat oil in a pan and fry the dough pieces until golden brown on both sides.
- Remove and drain on a rack or paper towel.
