Beef and Vegetable Rolls with Soy Sauce Reduction

Thin beef slices stuffed with julienned vegetables and caramelized red onion, served with a rich soy sauce reduction that adds a touch of umami.

Ingredients
8 items- 6 pcsBeef CarpaccioVery thin slices
- 1 pcsCarrotMedium size
- 1/2Savoy CabbageHalf a head
- 1 pcsRed OnionMedium red onion
- Red Wine VinegarTo taste
- Cane SugarBrown sugar, to taste
- Olive OilExtra virgin olive oil, as needed
- Soy SauceKikkoman soy sauce, classic or gluten-free (blue cap)
Method
- Cut the cabbage and carrot into very fine julienne strips.
- Slice the red onion and soak it in cold water for a few minutes.
- In a pan with a drizzle of oil, sauté the onion, adding red wine vinegar and brown sugar, and caramelize it.
- Take thin slices of beef (carpaccio) and fill them with the julienned vegetables and caramelized onion.
- Roll up the beef rolls tightly.
- Cook the rolls over high heat on both sides until golden brown.
- Serve the rolls with a reduction of soy sauce.
