- For the bread: In a bowl, combine water, milk, yeast, sugar, and an egg. Mix well.
- Add flour 00 and Manitoba flour gradually while kneading in a stand mixer. Add salt, then add small pieces of butter until fully incorporated. Knead until smooth and elastic.
- Divide the dough into 106g pieces and shape into rolls. Let proof at room temperature for 2.5 to 3 hours in a warm place (e.g., oven with light on).
- Brush the proofed rolls with egg yolk. Bake in a static oven at 190°C (375°F) for 20-25 minutes or until golden.
- For the cabbage: Cut the cabbage into fine strips. Sauté in a pan with a drizzle of oil, salt, pepper, and a splash of vinegar. Cook until tender.
- To assemble: Slice the homemade rolls in half. Place a pork sausage inside. Top with sautéed cabbage and a generous spread of mustard. Serve immediately.
