Method

  1. For the bread: In a bowl, combine water, milk, yeast, sugar, and an egg. Mix well.
  2. Add flour 00 and Manitoba flour gradually while kneading in a stand mixer. Add salt, then add small pieces of butter until fully incorporated. Knead until smooth and elastic.
  3. Divide the dough into 106g pieces and shape into rolls. Let proof at room temperature for 2.5 to 3 hours in a warm place (e.g., oven with light on).
  4. Brush the proofed rolls with egg yolk. Bake in a static oven at 190°C (375°F) for 20-25 minutes or until golden.
  5. For the cabbage: Cut the cabbage into fine strips. Sauté in a pan with a drizzle of oil, salt, pepper, and a splash of vinegar. Cook until tender.
  6. To assemble: Slice the homemade rolls in half. Place a pork sausage inside. Top with sautéed cabbage and a generous spread of mustard. Serve immediately.
