Method

  1. Wash the sushi rice and let it rest in water for 30 minutes.
  2. Cook the rice with an equal weight of water. Bring to a boil, reduce heat, cook for 15 minutes, then turn off the heat and let rest for 15 minutes.
  3. Prepare the sushi vinegar: mix rice vinegar, salt, and sugar. Let rest for 30 minutes.
  4. Season the cooked rice with the sushi vinegar mixture.
  5. Cut the fish (tuna, salmon, yellowtail, red shrimp) into small pieces to make a tartare.
  6. Cut the nori seaweed into strips: fold the sheet in half and cut.
  7. Wet your hands and shape rice into small boat-shaped balls (about 25-30 g each).
  8. Wrap each rice ball with a strip of nori, sealing the edge with a grain of rice.
  9. Place a small amount of wasabi inside each rice boat.
  10. Top each boat with the fish tartare and garnish with salmon roe.
