Gnocchi with Chanterelles

A simple yet exquisite pasta dish featuring fresh chanterelle mushrooms (finferli or galletti) sautéed with shallots and cream, then tossed with gnocchi and finished with taleggio and Parmigiano-Reggiano cheese. The mushrooms are cooked until they release their moisture and then caramelize slightly, creating an intense woodland flavor. Perfect for showcasing the delicate taste of chanterelles.

Ingredients
9 items- 500 gFinferli (Galletti)Fresh chanterelle mushrooms; can also be cleaned by trimming root end and washing
- 250 gGnocchiPotato gnocchi; can substitute with tagliatelle, pappardelle, or fettuccine if desired
- 1 pcsShallotSmall shallot, finely chopped
- 50 gTaleggioA piece about 50g; rind can be left on or removed according to taste
- 20 gButterUnsalted butter
- 40 gParmigiano-ReggianoGrated; can substitute with Grana Padano
- CreamA splash of cream for deglazing; adjust quantity based on desired creaminess
- Pepe mistoMixed peppercorns, freshly ground
- SaltTo taste
Method
- Clean the chanterelles by trimming the root end and washing them in water to remove any dirt. Pat dry.
- Tear the mushrooms open from the cap into smaller pieces, leaving some small ones whole if desired.
- Finely chop the shallot.
- Melt the butter in a large pan over medium heat. Add a grind of mixed pepper and let it toast slightly as the butter melts.
- Add the chopped shallot and cook until it becomes translucent.
- Add the prepared chanterelles to the pan, season with a pinch of salt, and increase the heat to medium-high.
- Cover the pan and cook until the mushrooms release their water and the liquid reduces, about 10-12 minutes. Stir occasionally.
- Once the water has evaporated and the mushrooms start to stick to the pan (developing the Maillard reaction), reduce the heat.
- Meanwhile, bring a pot of salted water to a boil and cook the gnocchi until they float to the surface.
- Deglaze the mushroom pan with a splash of cream, scraping up any browned bits. Keep the heat high.
- Add the taleggio cheese (with or without the rind) and stir until melted.
- Add a generous amount of grated Parmigiano-Reggiano and stir to create a creamy sauce. Adjust consistency with pasta water or more cream if needed.
- Drain the gnocchi (reserve some cooking water) and add them directly to the mushroom pan. Toss over high heat for about 20 seconds to finish cooking.
- Remove from heat. Add a final sprinkle of Parmigiano and toss again.
- Serve immediately, with a final grating of mixed pepper on top.
