Fried Potato Gnocchi

Crispy on the outside and soft like clouds inside, these fried potato gnocchi are the ultimate aperitivo snack. Seasoned with pink pepper and lime zest for a fresh kick.

Ingredients
8 items- 1000 gPotatoes
- 12 gSaltfor the dough
- 325 gFlourabout 300–350 g
- 1 pcsEgg
- Semola Rimacinatafor dusting
- Peanut Oilfor frying
- Pink Pepperto taste
- Lime Zestto taste
Method
- Boil the potatoes until a skewer pierces them easily.
- Let them cool slightly, then peel and mash using a potato ricer or fork.
- Add the salt, flour, and egg. Mix until a smooth dough forms.
- Lightly dust a work surface with fine semolina. Shape the dough into small gnocchi or hand-roll into bite-sized pieces.
- Heat peanut oil for frying to about 170°C (340°F).
- Fry the gnocchi in batches until golden brown and crispy, about 3–4 minutes. Drain on paper towels.
- Season immediately with pink pepper, grated lime zest, and a pinch of salt. Serve warm.
