Original Spanish Gazpacho made with tomatoes, cucumber, green bell pepper, stale bread, olive oil, vinegar, and salt. Cold and refreshing.

Ingredients
9 items- 1 kgTomatoesRipe, preferably Italian or Spanish
- CucumberPeeled and cut into chunks
- Green Bell PepperGreen bell pepper, seeds and white pith removed
- Stale BreadStale bread, crust removed (optional)
- Olive OilExtra virgin olive oil, about 4-6 tablespoons
- 4 tbspWhite VinegarWhite vinegar; sherry vinegar preferred
- SaltFine salt, to taste
- 80 gWaterCold water, about 80-100 g per kg of tomatoes
- Chili Powder(optional) — Chili powder, for garnish (optional)
Method
- Remove the crust from the stale bread (or leave it on for a more intense flavor).
- Cut the tomatoes into pieces, removing the stem end.
- Peel the cucumber and cut it into chunks.
- Clean the green bell pepper, removing seeds and white pith.
- Place all the vegetables and the bread into a blender.
- Add olive oil, white vinegar, salt, and a little water (about 80-100 g per kg of tomatoes).
- Blend until smooth.
- Pass the mixture through a strainer to achieve a silky texture.
- Adjust seasoning to taste, then chill in the refrigerator. Serve cold, optionally with a sprinkle of chili powder and a drizzle of olive oil.
