A delicious fish burger made with leftovers: cooked fish, boiled potato, and simple seasonings, pan-seared and served with lettuce, tomato, and homemade baked potato chips.

Method
- Peel the boiled potato and place in a bowl. Mash lightly with a fork.
- Remove skin from the leftover cooked fish and chop roughly.
- Add the fish to the potato. Season with salt, lemon zest, and chopped parsley.
- Add a tablespoon of mayonnaise and half a tablespoon of beaten egg. Mix.
- Add some breadcrumbs to compact the mixture. Adjust as needed.
- Using a ring mold, shape the mixture into patties.
- Cook the patties in a non-stick pan with a little oil over medium heat until golden brown on both sides. Avoid turning too often.
- For the chips: slice a raw potato thinly (use a mandoline). Arrange on a baking sheet and bake at 180°C (fan-assisted) for 10 minutes.
- Assemble the burger: spread mayonnaise on both halves of the bun. Add lettuce and tomato slices.
- Place the fish patty on the bottom bun. Add the baked chips on top.
- Close with the top bun and serve immediately.
