Fried Falafel with Celery

Crispy on the outside and soft on the inside, these fried falafel are served with a refreshing yogurt and chive sauce. The recipe uses chickpeas, celery leaves, and a touch of cumin, with a quick sauté before blending.

- Cumina pinch
- Celery Leavescelery leaves
- Olive Oilextra virgin olive oil, for cooking and blending
- Yogurtfor the sauce
- Chiveschives, chopped
- Lemon Zestlemon zest
- Saltsalt, to taste
- Pepperblack pepper, to taste
- Frying Oiloil for deep frying
Method
- Roughly chop spring onion, garlic, and a piece of ginger.
- In a pan, add oil, the chopped aromatics, chickpeas, and a pinch of cumin. Sauté over high heat for about 5 minutes.
- Add celery leaves and continue cooking for another 5 minutes until slightly colored.
- Remove the ginger and garlic clove (optional).
- Transfer the mixture to a blender, add a drizzle of oil, and blend until smooth but not too soft.
- Transfer the falafel mixture to a bowl and refrigerate for at least 2–4 hours.
- For the yogurt sauce: mix yogurt, chopped chives, lemon zest, salt, pepper, and oil. Refrigerate until needed.
- After resting, shape the mixture into small, uniform balls.
- Heat oil to 180°C (350°F) and fry the falafel until golden and crispy.
- Serve the falafel with the yogurt sauce.
