A cross between a pancake and a crêpe, this soft and enveloping dessert is a true delight. Particularly versatile, the Dutch Baby is served with fresh berries and powdered sugar, but you can also try it savory!

Ingredients

- 3 pcsEggLarge eggs
- 150 mlMilkWhole milk recommended
- 1 pcsLemon ZestZest of one lemon; orange zest can be substituted
- 1 tspVanilla Extract(optional) — Optional
- 30 gButterCoconut oil can be used as an alternative

- Fresh Fruit(optional) — To taste; e.g., raspberries, blueberries

Method
- In a bowl, crack the eggs and add a pinch of salt, lemon or orange zest, and optionally vanilla extract.
- Add the flour and mix until smooth.
- Add the milk and mix to form the batter.
- Heat an oven-safe skillet and add butter (or coconut oil) until melted. Turn off the heat.
- Pour the batter into the skillet.
- Bake in the oven for 10-15 minutes (the pancake will puff up and then deflate).
- Serve immediately while hot directly in the skillet.
- Decorate with fresh fruit (e.g., raspberries, blueberries) and sweeten with maple syrup or honey.
- Finally, dust with powdered sugar.
