A traditional Japanese pancake filled with sweet red bean paste, inspired by the beloved character Doraemon.

Method

  1. In a bowl, whisk together the eggs and sugar until well combined.
  2. Add the milk and mix thoroughly.
  3. Sift in the flour and vanilla baking powder, then stir until the batter is smooth. Let it rest for 10 minutes.
  4. Heat a non-stick pan over medium-low heat. Lightly grease with oil and wipe off any excess with a paper towel.
  5. Pour a small ladle of batter into the pan to form a circle. Cover with a lid and cook for about 2 minutes, until bubbles appear on the surface.
  6. Flip the pancake carefully using a spatula and cook for another 30 seconds.
  7. Remove the pancake and let it cool on a wire rack, keeping the browned side up to avoid sticking.
  8. Spread a generous amount of red bean paste (anko) onto one pancake, then sandwich with a second pancake. Serve immediately.
