Crostone of Bread with Puntarelle and Stracciatella

A crunchy crostone topped with fresh puntarelle (chicory) in a tangy anchovy-garlic dressing and creamy stracciatella cheese. Perfect as a starter or antipasto.

Ingredients
7 items- 1 pcsPuntarelle1 head of puntarelle
- 30 gAnchovies in Oil
- 20 gExtra Virgin Olive Oil
- 10 gWhite Vinegar
- 1 pcsGarlic1 clove
- 30 gStracciatella
- 40 gBread1 slice of crusty bread
Method
- Remove the outer leaves of the puntarelle (set them aside for another use).
- Cut the puntarelle into thin strips and place them in a bowl of ice water to crisp.
- In a small bowl, combine extra virgin olive oil, a clove of garlic, white vinegar, and anchovies. Blend or mix well to obtain a smooth sauce.
- Drain the puntarelle from the ice water and toss with a generous amount of the sauce.
- Take a slice of crusty bread (crostone) and toast it if desired.
- Top the bread with the dressed puntarelle.
- Add a few pieces of stracciatella cheese on top.
- Optionally, garnish with additional anchovies and serve immediately.
