Spanish Croquettes

Crunchy on the outside and super creamy on the inside, these Spanish croquettes are made with a béchamel base, chorizo, and a touch of shallot for extra flavour. Chef Andrea Larossa puts his own spin on the classic recipe, using chorizo instead of Iberian ham and adding cream cheese for extra creaminess. Double breaded and fried to perfection, they are an irresistible tapas-style treat.

Ingredients

- 50 gButter
- 60 gFlourfor the roux and for breading
- 1 lMilkwhole milk
- Spreadable Cheeselike Philadelphia, about 100–150 g
- 240 gChorizodiced
- Saltto taste
- Pepperto taste, preferably white pepper
- Extra Virgin Olive Oilfor sautéing
- Eggfor breading, about 2–3 eggs
- Breadcrumbsbreadcrumbs, for breading
- Frying Oilneutral oil with high smoke point
Method
- Finely chop the shallot.
- In a skillet, melt a little butter with a drizzle of olive oil and sauté the shallot until soft and translucent. Set aside.
- In a separate pot, heat the milk without boiling.
- In another pot, make the roux: melt 50 g of butter, add 60 g of flour, and cook for a couple of minutes, stirring constantly.
- Pour the hot milk into the roux all at once, whisking vigorously to avoid lumps. Cook until the béchamel thickens.
- Season the béchamel with salt and pepper.
- Add the cooked shallot, diced chorizo (about 240 g), and cream cheese to the béchamel. Mix well.
- Spread the mixture onto a tray and let it cool completely. For best results, refrigerate for several hours or overnight.
- Once cold and firm, shape the mixture into elongated croquettes (like small logs).
- Prepare a breading station: flour, beaten eggs, and breadcrumbs.
- Coat each croquette first in flour, then in egg, then in breadcrumbs. Repeat the egg and breadcrumb steps for a double breading.
- Place the breaded croquettes in the refrigerator for at least 30 minutes to set.
- Heat frying oil to about 180°C (350°F). Fry the croquettes in batches until golden brown and crispy.
- Serve hot, optionally with aioli or other dipping sauce.
