Cauliflower and mustard croquettes with a sweet chili mayonnaise dipping sauce. A simple and delicious finger food.

- Potatoesboiled
- 1 pcsEgg Yolk
- Mustard Seedswhole grain
- Pecorino Romanograted
- Chiveschopped
- Breadcrumbs(optional) — if needed to adjust moisture
- Flourfor coating
- Mayonnaisefor sauce
- Vinegarto taste
- Saltto taste
- Sweet Chili Pepperto taste
Method
- Boil potatoes and cauliflower separately until tender. Drain and let cool slightly.
- Mash the boiled potatoes with a potato masher.
- Mash the boiled cauliflower with a fork, leaving some chunks.
- Combine the mashed potatoes and cauliflower in a bowl.
- Add whole grain mustard, grated pecorino romano, egg yolk, and chopped chives. Mix well.
- If the mixture is too moist, add breadcrumbs a little at a time until the dough is workable.
- Shape the dough into croquettes (small balls or logs).
- Lightly coat each croquette with flour.
- Fry the croquettes in hot oil until golden brown.
- Prepare the sauce: mix mayonnaise with a pinch of salt, a splash of vinegar, and sweet chili to taste.
- Serve the croquettes with the sauce.
