Method
- Prepare the crêpe batter: mix flour, eggs, and milk until smooth. Let rest for 1 hour.
- Heat a non-stick pan with a knob of butter. Pour a ladle of batter and swirl to form a thin crêpe. Cook until golden on both sides. Repeat for remaining batter.
- For the sauce, melt butter and sugar in a large pan until lightly caramelized.
- Add fresh orange juice and grated orange zest to the caramel, stir to combine.
- Add Grand Marnier and carefully flambé to burn off the alcohol.
- Fold crêpes into quarters, place them in the sauce, and coat well. Serve immediately.
