Method
- Preheat the oven to 190°C (375°F).
- For the sweet potato sticks: wash and cut the sweet potatoes into sticks about 1 cm thick, leaving the skin on.
- Toss the sweet potato sticks with olive oil, salt, pepper, paprika, garlic powder, and chopped parsley.
- Spread the sticks on a baking tray and bake for about 25 minutes until golden and crispy.
- Meanwhile, prepare the tofu cutlet: in a food processor, combine 250 g tofu, fresh herbs (chives, parsley, thyme, sage, basil), 1 tablespoon potato starch, olive oil, salt, and pepper. Blend until smooth and creamy but not sticky.
- Transfer the mixture onto a lightly oiled sheet of parchment paper. Form into flat patties, about slightly less than 1 cm thick.
- Prepare the breading: mix breadcrumbs with smoked paprika. Coat each tofu patty thoroughly.
- Heat oil for frying to 170–180°C (340–350°F). Fry the breaded patties for 3–4 minutes per side until golden brown. Use the parchment paper to carefully lower the patties into the oil to prevent breaking.
- For assembly: slice hamburger buns in half and toast them in the oven for a few minutes until crispy.
- Spread a layer of tomato ketchup on the bottom bun. Place a fried tofu cutlet on top, then add slices of tomato and lamb's lettuce (songino). Close with the top bun.
- Serve hot with the baked sweet potato sticks on the side.
