Fried Lamb Chops

In this video I will reveal how to prepare perfect Fried Lamb Chops, crispy on the outside and very tender on the inside. We'll see together the difference between lamb and suckling lamb, how to clean the chops with professional technique and, above all, how to get a breading that doesn't come off during cooking. From lard to the final lemon zest, every step is designed for a true restaurant result right in your home kitchen.

Method

  1. Clean the lamb chops: trim the ribs, remove excess fat, and pound each piece to an even thickness of about 1 cm (0.4 in). If using the belly part, cut into pieces.
  2. Beat the eggs in a bowl until smooth. For an even lighter result, you can use only egg whites.
  3. Finely chop the fresh rosemary needles.
  4. Mix the breadcrumbs with the grated Pecorino Romano and the chopped rosemary. Season with black pepper to taste.
  5. Dip each lamb piece first into the beaten egg, then coat thoroughly with the breadcrumb mixture, pressing gently so it adheres.
  6. Heat lard (or high-oleic peanut/sunflower oil) in a deep pan to 180°C (350°F).
  7. Fry the lamb chops in batches, about 2–3 pieces at a time, for 2.5 minutes per side, lowering the heat if necessary to maintain 170–185°C (340–365°F). The belly pieces may cook slightly faster.
  8. Remove the fried chops and drain on paper towels. Finish with a sprinkle of fresh lemon zest, a squeeze of lemon juice, and a pinch of salt. Serve immediately with lemon wedges.
