Club Sandwich with Fresh Mackerel

Today our Lello arrived in the kitchen and wanted to surprise us: he thought of an exquisite and innovative twist on the Club Sandwich. For the filling he chose delicious mackerel fillets in olive oil, then added arugula (which crunches under the teeth) and a delicate, fresh and enveloping filling made with sundried tomatoes in oil, pine nuts and lemon zest. A real gem to try!

Ingredients
10 items- Sandwich BreadSlices of sandwich bread
- Dried Tomatoesfor the sauce

- Olive Oil
- Pepper
- Lemonzest and juice

Method
- Blend the sundried tomatoes, pine nuts, salt, olive oil, pepper, lemon zest, and lemon juice into a creamy sauce.
- Toast the bread slices in the oven under the grill setting for a couple of minutes.
- Remove the bread from the oven, place slices of Emmental cheese on top, and return to the oven until the cheese melts.
- Season the arugula with a pinch of salt, a drizzle of olive oil, and a few drops of lemon juice.
- Open the jar of mackerel fillets in olive oil and drain slightly.
- Assemble the sandwich: spread some of the tomato-pine nut cream on one slice of bread, add the seasoned arugula, place the mackerel fillets on top, and cover with the other bread slice.
- Cut the club sandwich in half and serve.
