Ingredients

- Cumino in Polvere
- Oregano
- 1 pcsOnion
- Mixed Peppersyellow and green, coarsely chopped

- Baconcut into small pieces
- Garlica few cloves
- 1.2 kgMacinato Di Manzo Grasso
- Peeled Tomatoescanned peeled tomatoes
- Chicken Brothhomemade or store-bought
- Vinegarfor deglazing
- Coriandolo Frescochopped, for garnish
Method
- Prepare the chili paste: finely grind the dried Mexican chilies. Add one tablespoon of tomato paste, one tablespoon of oil, and some water. Pound everything in a mortar.
- In a bowl, mix cilantro, cumin, and oregano.
- Dice the onion, cut the yellow and green bell peppers into coarse pieces, and slice the fresh chili. Cut the bacon into small pieces.
- Heat a drizzle of oil in a cast iron pot. Brown the ground beef until golden. Remove and set aside.
- Add more oil to the pot. Sauté the onion, garlic, and bacon until softened.
- Add the fresh chili, bell peppers, another drizzle of oil, and the spice mix. Deglaze with a splash of vinegar.
- Return the meat to the pot. Add the homemade chili paste, peeled tomatoes, and chicken broth. Stir.
- Cook on low heat for about two hours, stirring occasionally.
- Serve the chili con carne garnished with chopped cilantro.
