Cheese Naan is an Indian bread that needs no introduction, yet every time it comes out of the pan it feels like magic. Soft, puffed, with a melting cheese heart that never seems enough.

Ingredients
7 items- 500 gFlour
- 300 mlWarm Milk
- 3 tbspPlain YogurtThe secret is in the yogurt: it gives the dough a slightly acidic and soft texture.
- 2 tbspSugar
- 13.5 gFresh Brewer's Yeast
- 8 gSalt
- Formaggio (filante o grattugiato)Use a melting cheese (like mozzarella) or grated cheese (like cheddar).
Method
- Mix fresh yeast, warm milk, yogurt, sugar, and a pinch of salt in a bowl.
- Gradually add the flour and knead until a smooth dough forms. Cover and let rise for 2 hours or until doubled in size.
- Divide the dough into 8 equal pieces. Roll each piece into a small disc.
- Place a generous amount of cheese (melting or grated) in the center, then fold the edges over to seal it completely. Gently roll again into a flat disc, being careful not to break the seal.
- Heat a pan over high heat until very hot. Cook the naan without oil for 1-2 minutes per side, until puffed up and golden brown spots appear. Serve immediately.
