Cassoulet

Cassoulet is a traditional French dish of white beans and mixed meats, slow-cooked in the oven. This version by Chef Andrea Larossa includes duck legs, smoked sausages, pork shank and belly, mushrooms, and a crispy breadcrumb topping.

Ingredients
19 items- Duck LegsCan substitute with chicken legs.
- Pork SausageFresh pork sausages.
- Smoked SausageSmoked pork sausages. You may use only fresh or only smoked.
- Pork ShankPork shank, pre-cooked if available.
- Pork BellyPork belly, pre-cooked or braised.
- Champignon Mushrooms(optional) — Optional. Can be omitted or replaced with other mushrooms.
- Cannellini BeansWhite beans. Other white beans like Great Northern can be used.
- Celery
- Carrot
- Onion
- Garlic
- Salt
- Pepper
- Duck Fat or LardDuck fat or lard. Butter can be used as a substitute.
- Extra Virgin Olive Oil
- Parsley
- Sandwich BreadFor the breadcrumb topping. Can use fresh or dried breadcrumbs.
- Meat BrothBeef or chicken broth. Water can be used if needed.
- Bread (For Serving)(optional) — To serve alongside, grilled or toasted.
Method
- Soak the white beans in water overnight. Drain before use.
- Preheat the oven to 160°C (320°F).
- In a large casserole or Dutch oven, heat some duck fat (or lard) with a drizzle of olive oil.
- Brown the duck legs, fresh sausages, smoked sausages, pork belly, and pork shank on all sides over medium-high heat. Remove and set aside.
- In the same pot, add the roughly chopped garlic, celery, carrot, and onion. Sauté until softened.
- Add the mushrooms and cook for a few minutes.
- Return all the browned meats to the pot.
- Add the drained white beans.
- Pour in enough broth to just cover the ingredients.
- Season with salt and pepper.
- Cover the pot and transfer to the oven. Cook for 3 hours.
- Meanwhile, prepare the topping: mix breadcrumbs with chopped parsley and minced garlic.
- After 3 hours, remove the pot from the oven. Increase oven temperature to grill/broil.
- Sprinkle the breadcrumb mixture evenly over the cassoulet.
- Place under the grill until the topping is golden and crispy, about 5 minutes.
- Serve warm with grilled bread.
