Calamarata alle Vongole

A classic Neapolitan pasta dish featuring calamarata (short, ring-shaped pasta) and fresh clams in a light, spicy sauce with garlic, white wine, and a hint of 'nduja for heat. Simple yet elegant.

8 items- 200 gCalamarata
- 120 gVeraci Clams
- 1/2 cupWhite Wine
- 1 pcsChili Pepper
- 2 pcsGarlic
- 2 pcsParsley Stems
- Salt and Extra Virgin Olive OilTo taste
- 1 tbsp'Nduja
Method
- Bring a pot of salted water to a boil for the pasta (optionally use the clam cooking water later).
- In a large pan, heat olive oil and sauté garlic, chili pepper, and parsley stems until fragrant.
- Add the clams, cover with a lid, and let them open over high heat. Discard any that remain closed.
- Once open, deglaze with white wine and let it evaporate slightly.
- Remove the clams from the pan and set aside, keeping their cooking liquid in the pan.
- Cook the calamarata in the clam cooking liquid (adding more salted water if needed) until al dente.
- Return the clams to the pan, add a spoonful of 'nduja, and toss everything together.
- Serve immediately with a drizzle of raw olive oil and a sprinkle of fresh parsley.
