Nigerian yam porridge (Asaro) made with yam, tomatoes, peppers, onions, and dried shrimp. A traditional one-pot dish from Nigeria, creamy and flavorful.

Method

  1. Peel and cut the yam into slices. Remove the tough end and discard it as it is bitter.
  2. Place the yam in a bowl of water with a little salt and sugar. Let it soak (optional).
  3. In a pot, heat olive oil and sauté chopped onions, peppers, and tomatoes.
  4. Add the stock cube and salt, and cook the sauce for a few minutes.
  5. Drain the yam and add it to the pot. Cook until tender (fork goes in and out easily).
  6. Add the dried shrimp and continue cooking.
  7. Once the yam is nearly done, use a spoon to break up some of the yam to create a slightly mashed texture.
  8. Let it cook for another 10-15 minutes, then serve.
