Allorino is a traditional Italian digestif liqueur made from bay laurel berries (or leaves) infused in alcohol, then sweetened with sugar syrup. The process takes about a month of maceration and aging, resulting in a complex, aromatic, and slightly bitter liqueur.

Ingredients
5 items- 500 gBacche di AlloroMain flavoring; if unavailable, substitute with 100 g dried bay leaves (omit berries and add during initial infusion).
- 5 pcsBay Leaves(optional) — Optional; add during initial infusion for extra flavor. Can be used as substitute for berries (100 g leaves instead of berries, omitting these 5 leaves).
- 1 lAlcool Alimentare 96°Food-grade alcohol at 96% ABV; available at supermarkets.
- 500 gSugarRegular white sugar.
- 1 lWaterFiltered or still water.
Method
- Wash and clean 500 g of bay berries, removing any stems or spoiled berries.
- Place the berries in a clean glass jar. Add 5 bay leaves (optional but recommended).
- Pour 1 liter of 96% food-grade alcohol into the jar over the berries and leaves.
- Seal the jar tightly and let it infuse in a cool, dark place for 15–20 days.
- After the infusion, prepare the syrup: In a saucepan, combine 1 liter of water and 500 g of sugar. Bring to a boil, then immediately turn off the heat and stir until the sugar is completely dissolved.
- Let the syrup cool completely to room temperature.
- Pour the cooled syrup into the jar with the alcohol infusion. Stir gently to combine.
- Let the mixture infuse together for 24 hours.
- After 24 hours, strain the liquid through a fine-mesh sieve or cheesecloth into a clean container, discarding the berries and leaves.
- Bottle the liqueur into clean bottles and seal tightly.
- Let the bottled liqueur rest for at least 20 days before consuming. Serve chilled as a digestif.
