La storia
Wagner is a pasta dish that originated at Puok in Sant’Antimo, Italia, reputedly named for the composer Richard Wagner, whose dramatic operas inspired the dish’s layering of bold, contrasting flavours. The preparation features a base of hand‑rolled pappardelle or, in some interpretations, orecchiette, tossed with a ragù of braised wild boar and porcini mushrooms, then finished with a shaving of aged pecorino and a drizzle of truffle oil. The bitterness of the mushrooms is offset by a touch of dark chocolate grated into the ragù, a signature flourish at Puok. A great version is distinguished by the silkiness of the pasta, the deep umami of the slow‑cooked ragù, and the precise balance between earthiness and a subtle sweet‑bitter note. The chocolate must not dominate but merely echo the richness of the boar. As noted by user xMurry, who recommended the dish at Puok, the truffle oil is used sparingly so as not to mask the other elements. Outside Sant’Antimo, variations exist: some Tuscan trattorias substitute hare for boar, while Milanese versions replace the chocolate with a pinch of cinnamon and nutmeg. In Alto Adige, a lighter vegetarian adaptation swaps the meat for roasted cauliflower and adds a dollop of crème fraîche. Regardless of variation, the defining characteristic of a Wagner remains its operatic crescendo of flavours—a dish meant to be savoured slowly, like a Wagnerian leitmotif.

Uno dei fast food più buoni che abbia mai mangiato. I panini erano perfetti — un equilibrio dei sapori e un'originalità clamorosa. Sono veramente contento di essere venuto, anche se mi sono fatto 40 minuti. Il posto è veramente bello.
