La storia
The tortello farcito, a stuffed pasta from the Italian culinary tradition, traces its roots primarily to Emilia-Romagna and Lombardy, where the art of filled pasta reached high refinement. The name combines "tortello" (from torta, meaning a filled pastry) and "farcito" (stuffed), indicating a pasta envelope generously filled with savory ingredients. Unlike the simpler tortellini, tortelli are typically larger and often served as a single generous portion, sometimes folded into a rectangular or half-moon shape.
Key ingredients for the dough are flour and eggs, rolled thin to achieve a tender texture. The filling varies by region: in Lombardy, a classic version uses ricotta, spinach, and Parmigiano-Reggiano; in Emilia, pumpkin (tortelli di zucca) with amaretti and mostarda is traditional. A great tortello farcito is distinguished by an ultra-thin, silky pasta that does not overwhelm the filling, which should be moist but not wet, well-balanced in seasoning, and complementary to the sauce—often butter and sage, or a simple tomato fondue. The pasta must be cooked al dente, with the seam sealed perfectly to prevent leakage.
Regional variations are vast: Tuscany’s tortelli with potatoes and mint, or the sweet tortelli from Mantua filled with pumpkin and crushed amaretti. In Milano, Italy, two venues highlighted by the food channel Chef in Camicia offer noteworthy versions: Pasticceria Adolfo Stefanelli, known for precise pasta work, and Pavè, which presents a contemporary interpretation of this classic stuffed pasta. These locations exemplify the dish’s enduring versatility from kitchen to pastry shop.
