Speaking of classics, I ordered a Pavè classic, the Tonca: a tartlet with pistachio frangipane, raspberry and white chocolate infused with tonka beans. It doesn't make sense how good it is, very pistachio-ey, it tastes of white chocolate, salt and raspberry. The shortcrust is delicious. Order it, you won't go wrong.
Pavé makes excellent filled tortelli with perfect frying and lots of cream, but I was disappointed they don't offer a simple version to judge the dough properly.

These filled tortelli are presented in a box — they only make filled ones, no simple version, because it's their specialty. They're covered in sugar, the frying is perfect, and you can't taste the oil at all — maybe because there's so much cream inside that it covers it. The result is more than positive. This is pure chocolate — a soft, creamy ganache inside with crunchy chocolate pearls on top. It's incredibly rich and heavy, but delicious. The combo of the treccia and this is deadly. It costs €7, which is fair for the quality. You can see all the chocolate inside, it's a beast.
Caffè Filtrato
This is a filtered coffee, not espresso. It's less dense and less dark, but actually has more caffeine because the water stays in contact with the grounds longer. For once in my life I can drink a coffee that doesn't taste like death and destruction. It's actually good, unlike the burnt espresso you get in 90% of bars.
