Tarator is a cold, yogurt-based soup originating in the Balkans, particularly associated with Bulgarian and Macedonian cuisines, though similar versions appear across the Levant and Central Asia. Its name derives from the Persian “tarator,” meaning “sauce,” reflecting the dish’s ancient roots. The core ingredients are plain yogurt, water, cucumbers, garlic, dill or mint, and walnuts, often blended into a refreshing, tangy soup. A great version achieves a perfect balance: the yogurt should be thick and creamy, the cucumbers crisp and finely diced, and the garlic pungent but not overpowering. “The key is to let it rest in the fridge for at least an hour so the flavors marry,” notes chef Maria Petrova of Sofia’s Pod Lipite restaurant. Regional variations abound: in North Macedonia, tarator is often thinned with mineral water and served with ice cubes, while in Turkey, a similar dish called cacık uses mint and omits walnuts. In Serbia, it may include sour cream and radishes. Some Albanian versions add hard-boiled eggs. The dish is typically served as a starter or a light lunch, especially during hot summers. “It’s the ultimate cooling meal—like air conditioning in a bowl,” says food blogger Ivan Kolev of Taste of Bulgaria. Tarator’s simplicity and adaptability have made it a staple across the region, with each household adding its own twist.
