Rou Jia Mo, often called the "Chinese hamburger," is a street food staple from Shaanxi Province, China, with roots tracing back over 2,000 years to the Qin dynasty. The dish consists of succulent, slow-braised pork belly stuffed into a freshly baked, crispy flatbread known as *mo*. The pork is simmered for hours in a complex broth of soy sauce, star anise, cinnamon, ginger, and dozens of other spices until it becomes fall-apart tender. The *mo* is traditionally baked in a clay oven, giving it a slightly chewy interior and a shatteringly crisp crust.
A great version is defined by the balance of textures and flavors. The bread must be warm and crusty, never soggy, while the meat should be chopped—not shredded—and generously piled in, with a bit of the braising liquid spooned over for moisture. The pork should be rich and savory, with a subtle sweetness from the spices, and often finished with a sprinkle of fresh cilantro and green chilies for brightness.
Regional variations exist across China. In Xi'an, the dish is strictly pork-based, but in Muslim-majority areas of Shaanxi, a version using spiced beef or lamb, called *Yang Rou Pao Mo*, is common. Some modern interpretations add pickled vegetables or a drizzle of chili oil. Mark Wiens, visiting a stall near the Biangbiang Noodle Restaurant in Xi'an, highlighted the "incredible depth of flavor" from the long-braised pork and the "perfectly crisp, flaky bread," noting that the combination makes it "one of the most satisfying street foods in China."
