La storia

Pide is a traditional Turkish flatbread, often described as a boat-shaped or elongated pizza, baked in a stone oven. Its origins trace back to the Black Sea region of Türkiye, where it was a staple for sailors and laborers due to its portable, filling nature. The dish has since become a beloved street food and restaurant offering across the country.

The foundation of pide is a soft, yeasted dough, stretched and shaped into an oval with raised edges. A great version is distinguished by a perfectly crisp yet chewy crust, achieved from high-heat stone baking. The filling, typically a mixture of ground beef or lamb, onions, tomatoes, and green peppers, is generously spread inside the boat before baking. After emerging from the oven, it is often brushed with butter and topped with a squeeze of lemon. In Istanbul, food vlogger Mark Wiens praised the pide at an unnamed restaurant in the Fatih district, noting the "incredible, crispy, buttery crust" and the "perfect balance of meat and spice." He also highlighted Pideci Mehmet Usta, where the "cheese and egg pide" was described as "a masterpiece of simplicity."

Regional variations are abundant. In the Black Sea region, a common version is *kuşbaşılı pide*, featuring cubed lamb. In central Anatolia, *pastırmalı pide* uses cured beef pastrami, while *peynirli pide* (cheese pide) is a popular vegetarian option. Some coastal areas add seafood, such as anchovies. The defining characteristic across all variations remains the communal, hands-on eating experience, where the pide is torn and shared.
