Mysore Pak is a classic South Indian sweet originating in the royal kitchens of Mysore, Karnataka. Legend attributes its creation to the palace chef Kakasura Madappa, who developed the dense, gram-flour-based confection for the Maharaja. The dish’s name translates literally to “Mysore packet” or “Mysore package,” referring to its original portioned servings.
The essential ingredients are simple: chickpea flour (besan), generous amounts of ghee, sugar, and water. The technique, however, demands precision. A great version achieves a distinctive porous, melt-in-the-mouth texture that is neither too hard nor too crumbly.
