# Acciughe con Olive
**Acciughe con Olive** is a classic Italian antipasto and tapas preparation featuring anchovies paired with olives, representing a cornerstone of Mediterranean cuisine. This simple yet elegant dish exemplifies the Italian principle of letting high-quality ingredients speak for themselves.
## Origin and Tradition
The dish originates from Southern Italy, particularly regions with strong maritime traditions such as Sicily, Campania, and Calabria, where anchovies have been a dietary staple for centuries. The combination of preserved anchovies with brined or cured olives reflects the Mediterranean's historical reliance on preserved foods, predating modern refrigeration. This pairing became especially popular as a quick, protein-rich appetizer in Italian and Spanish coastal communities.
## Key Ingredients and Preparation
The dish requires only the finest components: high-quality anchovy fillets (typically salt-cured or oil-packed), premium olives (often green Castelvetrano or black Kalamata varieties), and typically extra virgin olive oil. Some preparations include fresh lemon juice, garlic, or red pepper flakes for additional complexity. The anchovies and olives are simply arranged on a plate or board, sometimes drizzled with quality oil.
## What Distinguishes Excellence
A superior version depends entirely on ingredient quality—the anchovies must be tender and properly cured without excessive saltiness, while olives should be fresh and flavorful. The balance between the briny, umami-rich anchovies and the fruity, sometimes bitter notes of olives is essential.
## Regional Variations
In Spain, particularly at establishments like **Quimet & Quimet** in Barcelona, the dish appears as part of montadito culture, served on bread. Italian versions typically present the components separately or minimally combined, emphasizing their individual qualities.
