Nidi di Rondine, or “swallow’s nests,” is a classic baked pasta from the Marche region of Italy, particularly associated with the inland areas around Pesaro-Urbino. The dish consists of thin, fresh pasta sheets spread with a savory filling—typically a blend of ricotta, spinach, Parmigiano-Reggiano, and sometimes ground meat or prosciutto—then rolled into tight cylinders, sliced into pinwheels, and arranged upright in a baking dish. The rolls are bathed in béchamel sauce or a light tomato sauce, topped with cheese, and baked until golden and bubbling.
