The **crocchetta di patate** (potato croquette) is a classic Italian *antipasto* or street-food snack, believed to have evolved from French *croquettes* brought to southern Italy during the Bourbon period. The dish consists of mashed potatoes bound with egg, seasoned with salt, pepper, and often nutmeg or parsley, then shaped into small cylinders or balls, breaded, and deep-fried until golden and crisp.

A great crocchetta is defined by its contrast: an exceptionally thin, shatteringly crunchy crust giving way to a soft, creamy, almost molten interior. The potato filling should be smooth but not gummy, with a delicate seasoning that lets the potato flavor shine. Overly thick breading or a dense, pasty center are common flaws.

Regional variations abound. In Rome, the crocchetta is a staple of *pizza al taglio* shops.
