Barbecue chicken is a globally beloved dish consisting of chicken—typically whole, quartered, or in parts—cooked over or with smoke, and coated in a seasoned sauce. Its origins are deeply rooted in the American South, where pit-cooking and basting with vinegar- or tomato-based sauces evolved into a cornerstone of regional cuisine. A great version is distinguished by a perfect balance of smoke, char, and moisture. The skin should be crisp and rendered, while the meat remains juicy and pulls easily from the bone. The sauce must complement, not overwhelm, the smoky flavor, often achieved through slow cooking over hardwood coals like hickory or mesquite.

Regional variations are vast. In the Carolinas, a thin, tangy vinegar-pepper sauce is favored; in Kansas City, the sauce is thick, sweet, and tomato-heavy; while in Texas, a dry rub with a light mop sauce often takes precedence. Internationally, the dish adapts further.
