The story

Nestled on the third floor of the Mandarin Oriental in Taipei’s Songshan District, Ya Ge is a one-Michelin-starred Cantonese restaurant that balances refined technique with an elegant, upscale atmosphere. Creator Jack’s Dining Room visited during a tour of Asian cuisine and singled out the deep-fried chicken as “the standout dish of the entire trip.” The menu also includes Peking Duck, honey-glazed barbecue pork, and crab shell stuffed with crab meat—each executed with the precision you’d expect from a hotel fine-dining room.

What makes Ya Ge memorable is its ability to let a seemingly simple dish like fried chicken steal the show. The kitchen’s consistency across multiple courses, from lacquered duck to delicate stuffed crab, reinforces its Michelin-star status. For diners seeking a celebratory Cantonese meal in Taipei, this restaurant offers warm service and a menu that rewards careful exploration.

AI summary of what 4 dish mentions say about the food

The Peking duck earns unanimous praise for its crackling skin and succulent meat, while the overall vibe is one of refined, comforting luxury that elevates a classic.

We've had three Peking ducks this trip. One at Matt's favorite family restaurant, another at a three Michelin star Cantonese restaurant. Now, this is a one Michelin star. I got to say, that's the crispiest looking skin of all the ducks I've seen so far. It looks so brown and golden, delicious, and so shiny. They said to pair it with some brown sugar and like white on top. Whoa. Very, very fatty duck skin, which is great. That'll be really good in a rolled up kind of bun. I'm getting really good vibes from those pancakes. They look super thin and chewy. Oh yeah. You want to be able to see through your duck roll. I'm liking the chewy consistency of this duck roll. It's almost like a flour tortilla. Duck's super tender. Love the crunch. Where to rank this? I think Dragon is still number one. I think that's probably number two.

    • Honey-glazed Barbecue Pork

This is our most famous barbecue. We got a hot black stone sizzling this pork with honey on top. Looks incredible. This is like the best possible version of that sweet roast pork. The honey sauce drizzled on top just puts it over the edge. Fatty, delicious. Incredible. Wow.

    • Crab Shell Stuffed with Crab Meat

Second time having this dish. So, it'll be good to compare this one to the three Michelin star. You have the shell. So, this one seems to me a little more crab poured and a little less saucy, which I actually like. The other one was almost like a crab mac and cheese.

    • Deep-fried Chicken

I thought that was duck, but this is actually chicken. Never seen a chicken look so much like a duck, which makes me excited. Salty. Wow, that is so juicy. And the skin is like so crispy. Insane chicken. They said they air fry the chicken and then they deep fry it. Because it looks so much like a duck, my brain's like convincing me it's duck. I did not expect to say this, but that was one of the best chicken dishes I've ever had in my life. It actually might be the best chicken I've ever had.
