This is the first course, and it comes out rapid fire. The smell hits you immediately — so fragrant. The presentation is one of the most gorgeous I've ever seen for fish. You can eat the whole thing, head first. When I bite into it, it's crisp all the way through, like a chip. That's not what I expected at all. The curry paste adds flavor and complexity without overpowering the fish. It's crazy.
