This is the legendary dish, the symbol of this restaurant. Inside the fresh pasta there's a filling of ricotta and spinach and an egg yolk, served with Malga butter, truffle, and sweet Parmesan. These are fried tortellini — they remind me of the fried tortellini from Bologna that we made a video about. These are devastatingly good. But there's a flaw: there are only three of them, not eight. I could eat a lot more.
