The story
In Milan’s Moscova district, Ristorante Max Mariola is a deeply personal affair—chef Max himself often works the room, plating carbonara tableside and crafting inventive riffs on Italian classics. The menu leans into bold creativity: Spaghetto Limone Basilico, Fettuccine alla Vodka con Spinaci, Croaker e Nocciole, and a Risotto con Zucca, Gambuccio e Provola. For the “perfect summer aperitif,” the chef pairs an Italian 75 with a Tartare di Fassona. The vibe is lively, elegant, and walk-in-friendly, with an open kitchen that makes every meal feel like a performance.
Creator Bertra calls the restaurant an “elegant, well-curated spot” with surprisingly generous portions, singling out the Benedetto Max as an incredible dish despite the high prices. Meanwhile, Braciamiancora highlights the tableside tartare and the chef-made carbonara, noting that the controversial €60 cotoletta—reinterpreted as a Fassona steak—is outstanding. For those seeking inventive, high-quality Italian fare served with unmistakable passion, this is a top-tier destination.

Risotto con Zucca, Gambuccio e Provola
I'm making a risotto with pumpkin, ham shank, and provola cheese. The ham shank is cheap — about €12.90 per kilo — and I use it like guanciale, cutting it into small pieces and rendering the fat. The pumpkin is Delica variety, very dry and firm, cut into tiny pieces so it cooks in 17 minutes with the rice. I toast the rice with leek, deglaze with prosecco, then add broth and pumpkin. At the end I cream with cold butter and Parmesan, then fold in provola for that stringy texture. The crunchy ham shank on top is essential. This is a unique dish, guys. Mamma mia, it's crazy!

RICETTA PICCANTE 🌶️ 😏 ❤️ per una DONNA BELLISSIMA Ospite del Mio RISTORANTE - Chef Max Mariola · @ 2:24

Fettuccine alla Vodka con Spinaci, Croaker e Nocciole
I made these fettuccine with vodka, fresh spinach, croaker fish, hazelnuts, spring onion, and chili pepper. The butter melts slowly with the spring onion, then I flambé the vodka right in the pan. No cream — just a little fresh butter to whip it into a creamy sauce. The fettuccine are cooked in vegetable broth, which gives them extra flavor. I top it with toasted Piedmontese hazelnuts and orange zest. It's spicy, fresh, and the fish cubes are big enough to feel under your teeth. This prototype came out amazing — I'd say it's a huge success.

How do you REALLY eat at Max MARIOLA?? · @ 0:11
Max Mariola's restaurant in Milan delivers on the promise of top-quality ingredients and traditional Roman cuisine with a personal, provocative twist — the tartare and carbonara are exceptional, and the controversial €60 cotoletta is actually worth every penny.

- Tartar di Fassona Piemontese
Carpaccio di Fassona Piemontese
Traditional carpaccio but at the same time innovative because of elements like the millefoglie di patate and the fried artichoke that you don't usually find. The meat is sliced paper-thin so it melts in your mouth. They use filet of Fassona Piemontese, and the dressing is pure: just salt, pepper, and good oil from Sicily. Then they add a crispy potato millefoglie that you use instead of bread, and shavings of Parmigiano 36 months. If you're a conscious omnivore, go for the carpaccio.
Tagliatella al Ragù di Diaframma
The tagliatella is rustic and concrete, you can taste the egg, it's very smooth even though it doesn't have a coarse grain. The ragù is made entirely by knife with diaphragm meat, which gives it a different flavor — usually ragù isn't made with diaphragm. That touch of fresh chili pepper I added works really well. This dish confirms that here the raw ingredients are the masters. For my personal taste, I prefer this one over the culatello tagliolini.
- Tagliolino al Culatello e Burro
Carbonara
This carbonara is the objective demonstration that the 'carbocrema' trend that flooded social media and ruined carbonaras was just a passing fad. This is a real carbonara. Max uses soft guanciale so the fat absorbs well into the pasta, then one whole egg and one yolk per person, cooking it like an English cream up to 80°C. The creaminess is perfect — it stays on the surface of the pasta, creamy but not runny. Pecorino and then the crunch of the guanciale. Stunning.
Max Mariola's restaurant in Moscova is an elegant, well-curated spot with surprisingly generous portions and incredible dishes like the Spaghetto Limone Basilico and the Benedetto Max, making it a top-tier dining experience despite the high prices.

Involtini di Max con Fiori di Zucca, Alici e Fior di Latte e Salsa all'Arrabbiata
These are the typical stuffed zucchini flowers, but with a crispy little roll around them and this devastating tomato sauce. So good. You really taste the fior di latte. The frying is done well because it doesn't cover everything. Look at that cheese pull! I really like the roll part around it, which wraps everything together physically and also in terms of flavour. It gives that little fried taste that usually was just in the zucchini flower when it's fried. Here the flower isn't fried, the outside is fried, and it's really really good. And this sauce is just slightly spicy, but very tomatoey. Amazing, amazing.
Benedetto Max
This is one of those flavours that just fills your mouth. You really taste the parmesan fondue, obviously, because it's a very strong flavour. The truffle works perfectly. Every now and then I get a porcini mushroom that gives that porcini note. Maybe the egg is the only thing I felt a little less, but it's delicious with the brioche bread that gives texture to everything. It's really really really good. Incredible. It changes a bit with every bite. For example, this one had much more mushroom, tasted more of porcini. If I take a piece with more yolk it'll taste more of egg. This is very very interesting. A very new, very zingy flavour. So far this might be my favourite. The rolls were delicious, but I've had them before. This is a reimagining of a classic Roman dish. This is incredible.
Carpaccio di Fassona con Tartufo, Carciofi Fritti e Scaglie di Parmigiano
The meat is amazing, the parmesan is perfect, very aged. The truffle here you feel a bit less, but it leaves that little flavour in your mouth. The artichoke I almost didn't notice. The meat is incredible, really good. Let me taste a piece on its own. Wow! Incredible meat. But I have to say that brioche bread was incredible, it makes you feel so many emotions. But all three appetizers are really quality. Wow! I knew it would be a cool restaurant, but it surprised me. It's surprising me. Really really good.
Spaghetto Limone Basilico
There's really a lot of basil. I mean, realise that the main antagonist of the second Harry Potter book has been stuffed into this pasta. If I look him in the eyes I'll turn to stone too. You didn't get it? Ah, sorry. It's hilarious. You should have laughed. Holy cow. Mmm. Mmm. You know butter? Like 4 kg for a plate of pasta. It's super buttery. If the butter before was good on bread, in here it's a hit. Very lemony, I can say delicious. Anyway, the butter gives that full, round flavour that fills your mouth well and then there's this lemon kick. Delicious. I've never eaten lemon pasta, I have to say I had my doubts, but it inspired me and I did well to get it. I made a good choice, it's not easy to get spaghetti. Really really good. Wow, insane. One of the best pastas I've eaten in recent years, I think. Amazing, amazing. You barely taste the basil, but this butter and lemon is incredible.
Brownie con Gelato al Cioccolato, Crumble, Marmellata di Lampone e Crema al Cioccolato Bianco
The brownie is good. I don't know where they got it, but this is artisanal chocolate ice cream. You can tell. It's also very good. Cool. Then there's this white cream that I think is mascarpone. No, it seems like a kind of mascarpone cream, but with something. Then there's this thing that we'll taste now to understand what it is. It's like a chewy coffee thing. Tastes like coffee. It's a hit. It's like a mini tiramisu this thing with chocolate, without the biscuits. It has nothing to do with tiramisu. Mmm. Ok, ok, it's damn good and eating it isn't bad at all. What a pain. I always start like this with good places, so then you tell me: 'Eh, but you see, you go because you already know it's good.' It's not true, right? I mean, I imagined it would be good, honestly, but wow, people don't talk enough about how good it is. Holy cow, what a phenomenal hit.
