An excellent restaurant where we had the authentic Marmite Dieppoise, with incredibly fresh seafood and a fantastic homemade mayonnaise; the quality is incomparable and the price was honest at €96.45 per person for the full menu.

This is the dish we came to Dieppe for. The molluscs and fish are cooked in butter, then deglazed with cider, then crème fraîche is added — it's basically the summary of Normandy in one dish. Having lived in Canada, I know chowder, which is a soup with milk, potatoes, shellfish and fish, eaten with a spoon. But the Marmite Dieppoise is eaten bit by bit, putting the molluscs and fish on the plate. The beautiful thing is that the crème fraîche and butter manage to cover the freshness of the fish — it's super fresh. There's that aftertaste of France, I call it the French aftertaste: all buttery and crème fraîche. The quality of the fish is incomparable to what you'll eat in America, where they put potatoes inside the soup. Here they bring the potatoes separately to finish the cream.

Between one thing and another, I couldn't define it but it's delicious. The indefinable thing for Fabrizio was apple — evidently I don't have apple receptors, I don't recognize apple. First thing: break this crust made of sesame seeds and caramel. Caramel ice cream — I'm already flying.
