On top, three small bowls: cucumber in osmosis, a tomato terrine with chunk sauce and taggiasca olive, and the cucumber flower. Then a sorbet of escarole mustard with burrata. Pineapple tomato — nothing to do with pineapple, it's named for the yellow stripes. Served simply with extra virgin olive oil and salt. Zucchini pasticcina, also named for its shape. At the base, a sharp sauce: mayonnaise base with parsley and tarragon. Yellow beet cream with white peach. Zucchini puree with taggiasca olive, our version of caponata — no pork inside, replaced with anchovy cream, basically bagnetto verde. Inside: radicchio, lettuce, horseradish on top, a rice leaf and apple. Then caponata sauce — the chef creates a sauce of this typical Sicilian dish with a purple eggplant from our garden, fried, with romesco sauce, a sauce based on hazelnuts, tomato and pepper. Enjoy everything as you like, no order. What we ate this morning at the garden is the equivalent of 100 normal cucumbers, but it melts in 30 seconds. The green sauce — the complexity of flavors.
