The main morsel, the white one, was a morsel of fresh, acidic, soft fish, while the black chip gave the bite a little crunchier and fattier.

Very fresh, acidic, bitter. The bitterness comes from the Bitter Melon, I think, given the name, the acidity from the seasonings that were given to these fish. Fish are super delicate. It's a really fresh and enjoyable bite. This really tastes like Thailand, and I really like the idea of mixing a sorbet with pieces of fresh fish.
