The dry noodles have the same incredible texture — really thin, not doughy or powdery, with that incredible springiness. The shrimp roe topping has so much flavor, a little bit of seafood but also a well-rounded sweet aroma, a little salty. What a combination, I've never had that topping on noodles like this before. The wobbly pieces of tendon are so creamy, jiggly, and wobbly. Big chunks of beef, so tender and fatty. The wonton noodles, especially the brisket with the shrimp roe, that stood out to me.
