The cappelletti in broth remind me so much of Christmas. This capon broth has a wonderful aroma, it's clear, very flavorful, and richly perfumed. The cappelletti are tiny, made with a sewing needle, they practically melt in your mouth. I added abundant high-quality Parmigiano Reggiano that melts on the bottom of the plate, and when I finish the cappelletti I scrape up all that melted Parmigiano. Perfect marriage of broth, cappelletto, and meat filling: mind-blowing.
Lasagnetta con Besciamella e Funghi Porcini
This little lasagna is very simple: abundant béchamel and porcini mushrooms, probably slightly stained with tomato given the orange color. You really taste the porcini and the gratinated béchamel. The aroma is out of this world. If I have to find a flaw, it's a bit small, but for a place like this the portion is right.
Patatina Arrosto
This roasted potato has an incredible crunch. You really hear the bite, it's truly special. It's among the best we've tasted, because it's particular: it almost looks sanded on the outside, totally different. Good, crunchy.

The stuffing of the capon is different from the Veneto version because here they use a lot of Parmigiano. It's a phenomenal bread and Parmigiano ball. Great aroma, it's delicious.

I chose the semifreddo with sambuca and a mountain of zabaglione. Spectacular. The semifreddo is cold, the zabaglione is warm. A perfect contrast.
