They take the whole sac — the same sac that we dry to make bottarga. Here it's cooked fresh on the griddle, served with an oyster mayonnaise. The texture is very strange — it looked creamy but it has the consistency of sausage. You chew it, it doesn't melt in your mouth, it's very pleasant. The taste isn't very strong fishy, like a toned-down bottarga with the texture of sausage. I can't explain it better. The oyster mayonnaise, which the owner was so proud of, he told me to try it alone. This dish, guys, is a bomb. You have to get over the shock of seeing the raw sac, because cooked it's a bomb. Atomic. Good, good, good. Super generous portions. We paid €45.50 including his beer, a water, and my wine.
