The story

At Kato, chef-owner Jonathan Yao has built something rare: a fine-dining temple that pays unabashed homage to his Taiwanese heritage without losing an ounce of sophistication. As critic Michael Ligier notes, it's "one of the best and most underrated restaurants in the world," transforming nostalgic comfort foods into "elevated, balanced, and punchy dishes." The $325 tasting menu reads like a love letter to the island's street stalls and home kitchens, reimagined with precision and global flair. Think You Tiao with Brown Butter, Jamón Ibérico, and Caviar, where a classic fried dough gets an opulent makeover, or Aged Lamb Loin with Cumin Spice Blend and Black Pepper Bun, embodying the night market spirit in fine-dining form.

Beyond the bold flavors, there's a quiet intimacy to this four-and-a-half-star Michelin-starred ROW DTLA space. Dishes like Sablefish with Snap Peas, Cardoon, and Sour Mustard Relish, Quail with Cordyceps and Dried Morel Mushroom Sticky Rice, and even a playful Bread and Butter course all reinforce Yao's meticulous approach. The meal closes with a whimsical Yam Boba with Brown Butter Cookie and Fresh Cheese, a dessert that nods to the beloved milk tea staple while proving that elegance and nostalgia can coexist beautifully.

AI summary of what 7 dish mentions say about the food

Kato’s bread and butter earns unanimous praise, a simple yet transcendent starter. The overall vibe is one of quiet, refined delight, where every plate feels like a warm, thoughtful surprise.

Look how beautiful this bread and butter service is. The bread is so glossy, has a little bit of salt on it, and pulls apart so beautifully. 10 out of 10, no notes. It's got everything going for it — sweet, salty, a little crunch on the outside, really soft and fluffy on the inside. That's as close to a perfect bread as you can get.

    Loved

Kato is one of the best and most underrated restaurants in the world, offering an authentically Taiwanese fine dining experience that beautifully transforms nostalgic comfort foods into elevated, balanced, and punchy dishes.

    Dishes mentioned

    • You Tiao with Brown Butter, Jamón Ibérico, and Caviar

This is the most beautiful you tiao I've ever seen. Instead of being double-fried and oily like a traditional oil stick, they fill it with brown butter. Then there's jamón ibérico and a little caviar on top. When you bite into it, whatever is inside just oozes out — it's an explosion in your mouth. The ham gives it saltiness, the caviar adds creaminess. Pure bliss in a single bite.

    • Sablefish with Snap Peas, Cardoon, and Sour Mustard Relish

This dish has local snap peas, cardoon artichokes, and on top is sablefish from Northern California aged for about a week. There's a relish of sour mustard, and the broth is made from all the smoked fish bones cooked over the hearth. The fish is so soft and buttery, but it's cut through really nicely by that sour acidic note. The sourness is at the forefront, which I love, and then there's a little bit of spice underneath. It's beautifully balanced — it hits every flavor profile you can imagine.

    • Quail with Cordyceps and Dried Morel Mushroom Sticky Rice

This is their version of Peking duck — they treat the quail very similar to how you'd do fried squab in Cantonese food. It's lacquered with vinegar and maltose, smoked, oil-based. Visually it emulates Peking duck, but when you cut into it, it's completely different. We're trying it with some cordyceps and a dried morel mushroom sticky rice. It's super tender, beautiful flavors, with a nice glaze that's a little sweet and a little savory. Fantastic.

    • Bread and Butter

    • Aged Lamb Loin with Cumin Spice Blend and Black Pepper Bun

This is their version of cumin lamb skewers. They age the loin for about two weeks, serve it with the fat on. I'm surprised at how cumin-y this lamb is — normally when you see lamb presented like this, it's very decadent and rich, but this one has a really nice spice kick. The cumin is delicious. And then there's a black pepper bun filled with lamb shoulder — that's my favorite Taiwanese night market snack. Oh my god, that is beautiful.
