Even though tomatoes aren't really in season, they're using these preservation techniques to maintain that tomato flavor. The texture on the inside is really chewy. It's almost like a chewy candy. You just don't get prawns like that in the US. I wasn't originally going to react to a dish after another dish, but that one is so good. It deserves its own reaction.
