The Meringata caco di mila steals the show, a cloud of sweetness that lingers. Overall, the food here feels like a warm, rustic embrace.

The meringue cake with persimmon — at the base there's a supreme cream made with barley, on top cubed persimmon, a lemon gel, while around you find a meringue aromatised with coffee and anise. In the centre there's a rose sorbet, we unfold it on top, there's a splash of citrus and icing sugar. Accompanied by homemade cream gelato with vanilla and a strawberry sorbet at the base. This is our seasonal fruit and vegetable soup — we blanch seasonal fruit and veg from our garden in a boiling gel of water and sugar, and finish with our goat yogurt cut with white chocolate. I have no more words. How beautiful this cart is. If you could smell it... it's divine. This taste is dedicated to my mother, who is always searching for the best vanilla gelato in Italy like the one I ate in Canada. We'll go back together. It's autumn in a spoon. Exceptional. Exceptional. Persimmon, meringue, barley — it really makes you think of a fireplace, even though outside it's 28°C and we're in October. The dessert is right for the season, and the season that isn't right for the season. The savoury fruit and vegetable soup to degrease is very interesting, especially at this point in the meal. This dessert resets your palate and you could almost start eating again.

Il Colmetto is a fantastic agriturismo with a Michelin Green Star, where everything is self-produced from vegetables to proteins, and the cuisine by chef Riccardo Scalvinoni is exceptional — simple, clean flavours with every ingredient at its maximum potential, all at zero km, and the goat cheese appears everywhere; it was a joy that exceeded already high expectations.

    Dishes mentioned

    • Cocktail al Tè Rosso, Pisco e Cuore al Bergamotto

I had a cocktail with red tea, pisco, and bergamot heart — it was delicious, really good.

    • Pane a Lievito Madre con Burro di Capra

We started with sourdough bread — I suggest trying it with the goat butter. This butter is incredible, I'm speechless. It's a cloud of butter, pure heaven.

    • Focaccia
    • Chips di Lievito Esausto con Caponata

Crispy spent yeast chips served with caponata — very good, I could eat a whole pot of it.

    • Tenerume con Crema di Parmigiano e Pimpinella

The tender zucchini stem served with a Parmesan cream and burnet — we were lucky to have already tasted this at Pino Cuttaia's. Fresh, left raw so nice and crunchy, with a cheese filling. Great pairing.
