Cotoletta alla Bolognese con Friggione
Cotoletta alla Bolognese is a pork cutlet breaded and fried, then topped with prosciutto and melted cheese. It's heavy, delicious, and crazy good. The breaded layer is not crunchy — it's actually quite soft, thick, delicious. The meat inside is tender and juicy. The prosciutto on top and the cheese add additional flavor. Several flavors combining in only one bite. Friggione is a sauce made from onion and tomatoes — it has a very strong sweet taste coming from the onion, a little bit acidic from tomato, but mostly sweet. It goes best with some bread. That bite there with bread and friggione was enough to make my evening. Friggione is definitely my new favorite side dish. It goes nice in between the bites because cotoletta is quite savory and strong, but then this has a mild sweet taste, so you kind of cut in between. Whoever invented Cotoletta alla Bolognese should be celebrated. All these great ingredients, but then that final touch, the melted cheese — this is like the high point of each bite.
